My grandmother used to make steamed carrot pudding with lemon sauce and never got around to giving us the recipe. The recipe found here sounds very close, but I don't know how to "steam" it and do not own a steamer. I think my grandma steamed her pudding in tin cans in the oven (maybe over a pan of water). I don't know how full to do the cans, or how to seal them. Any suggestions?
I'm thinking about using an electric smoker, putting boiling water in the bottom pan, and steaming for about three hours. Don't know if this will work, but I've already told several family members that I think I found the recipe...so I have to do SOMETHING!
